I found this great recipe on CreamCheese.com for Chocolate Mint Grasshopper Pie. They have all types of recipes for cool desserts. They even have this Cheesecake Recipe Planner where you can create your own cheesecake and they give you instructions on how to make it!
Chocolate-Mint Grasshopper Pie

Recipe Rating:
Prep Time: 15 min
Total Time: 2 hr 15 min
Makes: 8 servings, one piece each.
1-1/2 cups cold milk
1 pkg. (4-serving size) JELL-O Pistachio Flavor Instant Pudding & Pie Filling
2 cups thawed COOL WHIP Whipped Topping, divided
6 DOUBLE STUF OREO Cool Mint Creme Chocolate Sandwich Cookies, chopped
1 OREO Pie Crust (6 oz.)
1 square BAKER'S Semi-Sweet Baking Chocolate

POUR milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 min. or until well blended. Gently stir in 1-1/2 cups of the whipped topping and the chopped cookies. Spoon into crust. Spread with remaining 1/2 cup whipped topping.
MELT chocolate as directed on package; drizzle over pie.
REFRIGERATE 2 hours or freeze until firm. If frozen, remove pie from freezer about 10 min. before serving; let stand at room temperature to soften slightly. Store leftovers in refrigerator or freezer.

Thanks for this - great recipe - cheap, easy and quick - why is it called a Whoopie Pie though?

Just found a link to Whoopie Pie but its not very extensive!

Yeah i like baking but i am not very good at it (its the timing i struggle with). Just been given a Nigella cook book - i think she is great but would like to learn a few more techniques. After checking out kraft though i think first thing after work ill go and buy a tub of philadelphia! Or maybe even make a Whoopie Pie!
