Re: Ham Left overs We cook a ham every year for Thanksgiving and I like coming up with different things to make with leftovers. My favorites:
-Rotini or penne pasta with ham, sugar snap peas, minced garlic, and red onion in a cream sauce (just some heavy whipping cream and parmesan cheese)
-Homemade "hot pockets" - I mix leftover cubed ham with cream of onion soup and whatever frozen vegetables I feel like (peas and broccoli are my favorites) and put a small scoop onto a square of pizza crust mix that I've divided into four parts. I sprinkle the ham mixture with some parmesan cheese, wrap up the pizza crust, and bake until the crust is golden brown.
- Scalloped potatoes and ham - my favorite scalloped potato recipe is thawed hash browns placed in a 9x13 dish sprinkled with garlic powder, black pepper, and parmesan cheese, then pour 2-3 c. heavy whipping cream over the potatoes. They turn out so creamy. Good either as a side dish or add leftover ham and you have a single-pan dinner! |
