Default Meals for a Poor College Student


Alright guys, I need some help. I'm trying to eat healthy, very healthy, and also trying to prepare meals that don't cost much as I'm putting myself through college right now. I have developed a couple meals on my own, that I think are very good, but you can only eat the same thing so many times, ya know? If you have any low fat, low to no carb meals that can be made for not too much money, post up your recipes!


Spicy Chicken Vegetable Soup:
1 Large Onion, chopped
5-6 Celery Stalks, chopped
5-6 Carrots, chopped
2tblspn Garlic, minced
1 Head of Cabbage, shredded
5-6 Long Hot Peppers, sliced
2lbs Bnls, Sknls Chicken Breasts
2 cans of Corn
10oz Button Mushrooms, sliced
1tblspn Canola Oil
.5lb Wheat Elbow Noodles
4 cans of Fat Free Chicken Stock
Fresh Chopped Rosemary and Seasonings to Taste

-Sautee celery, carrots and onion with garlic in canola oil until onions become translucent
-Add cabbage, peppers, mushrooms and corn and continue sauteeing for a few minutes until mushrooms are cooked through
-Add chicken stock and reduce heat, add rosemary, simmer uncovered
-In the meantime, chop chicken breasts into bite size pieces, season with salt and pepper, sautee over medium heat in a pan until golden brown
-Add chicken to soup, continue simmering on extremely low heat for an hour
-Before serving, boil elbow noodles and stir into the soup once al dente

Spicy Chicken Stir Fry

Brown Whole Grain Rice
2lbs Bnls, Sknls Chicken Breasts, chopped
4 cans of Water Chestnuts, sliced
6 Green Bell Peppers, sliced
2 Long Hots, sliced
1 Large Onion, sliced
2tblspn Garlic, minced
1lb Sugar Snap Peas
Any Store-Bought Stir Fry Sauce (I use fat free toasted sesame)
Sriracha
Ground Ginger, Salt and Pepper, to taste

-Sautee onions and peppers (both kinds) for a few minutes before adding garlic, and then continue sauteeing until onions begin to carmalize
-Sautee chicken breats in a seperate pan and set aside
-Boil rice
-Blanch sugar snap peas
-In a large pan or wok, combine all ingredients and stir to heat through



Edit: Sriracha is an asian-style garlic-chili hot sauce that is a DELICIOUS alternative to american style vinegar based hot sauces

Edit #2: Both of these dishes can be prepared in bulk and broken down into many meals (I won't estimate because it really depends how much you eat). I usually can get these two out for about $4-5 per meal, and they're both VERY good if done well, and very healthy. Any questions about anything I left out just post up

I highly recommend the cookbook entitled The Healthy College Cookbook: Quick, Cheap, Easy. I didn't discover it until after college but it is still a great cookbook for cooks at any cooking level or stage in life. Lots of great meal ideas that don't involve cooking from a box and are very cheap. I don't own it (I have checked it out from my library before), but I recall there being several different sections (breads, sides, entrees, etc) so you can create well-balanced meals. Hope this helps!
