Default Why does butter taste differently during summer as during winter ?


Butter is derived from the fat of milk and contains fat-soluble vitamins, flavours and other components. In summer cows graze on fresh grass, which contains carotenoids and flavour. In winter in most countries cows are fed with silage and/or hay. These are generally lower in carotenoids and flavours. Hence summer-butter is generally more aromatic and more yellow as compared to butter in winter months. In winter butter is also a bit harder, due to a difference in fatty acid composition.

Thanks for the thoughtful post.

We cook our shrimp in fresh butter its tasty regardless of the season.

But i didnt know about those carotenoids. Thats crazy.

Butter is one of the hardest flavors to imitate. Winter butter is pale, because the cows are fed hay at that time of the year. Summer Butter naturally has more colour in it, because the cows are eating fresh vegetation with carotene and chlorophyll in it. Summer Butter is also naturally harder than winter butter. Pure winter butter was more stable than pure butter from summer season.
