Default Walnuts


Ladies.
My husband and I have been having a problem with walnuts. We buy 3-lb. bags at Costco, freeze them, and put most of them in the freezer except for a week's worth in the fridge. We have been noticing a rancid taste even in baking. I would appreciate any help you can give me.

I think either your walnuts were possibly rancid when you bought them, make sure to taste first before you freeze them to be sure they are fresh. If that's not the problem then I'd guess it's probably freezer burn. That happened to me, as I guess my container wasn't vapor proof. They tasted awful and ruined my brownies. I just read that you should use a vacuum sealing method to prevent this problem. If freezer burn turns out not to be the problem then maybe it's just the walnut skin, which is pretty bitter. You can roast them a little when you bring them out of the freezer and rub those skins off with a clean lint free towel. This is all I can suggest. But mainly, make sure they are fresh before you freeze.

I found on Discoverbulk.com that you can find stores near your location to
buy walnuts. I would try a different place to purchase walnuts and call the
store ahead of time and tell them the
amount you are looking for. I freeze walnuts all of the time and I have never had any problems with the taste.
