Cucumber salad:

I've learnt this from my hungarian grandma...

grind the cucumber and put some salt on it, let it sit for 15 minutes so the cucumber will let the water out. Pour this liquid in a cup and mix it with some vinegar and sugar and poor it back to the cucumber. Put some red paprika on the top and it is great with sour cream on top. Hmmmmmm it's sooo good!

Many of the recipes you all are refferring look very tasty and I will be trying some of them such as the cucumber salad. I recently found a site and tried a cauliflower salad that was terrific. It is at http://www.easycooktips.com/saladcreations.php . It had a couple other salad recipes as well.

Try this potato salad!

Next time you have a cookout, try grilling up a potato salad. Here is a great recipe for doing just that.

INGREDIENTS:

* 8 medium red potatoes
* 2 large red onions
* 3/4 cup olive oil
* 1/4 cup balsamic vinegar
* 1/4 cup fresh parsley, chopped
* 2 tablespoon dijon mustard
* 1 tablespoon dill seeds
* salt and pepper to taste

PREPARATION:
Cut potatoes in half and microwave for about 2 minutes or until they just start to cook. Cut onions into 1/2 inch slices and place on hot grill with potatoes. Grill potatoes and onions until tender. Chop into small pieces (about 1/4 inch).
Combine olive oil, balsamic vinegar, parsley, mustard and dill seeds. Toss together with potatoes and onions until evenly coated. Season with salt and pepper and refrigerate for 2 hours. Serve cold.

I make a wonderful Tuna Salad. I start with the prime filet Bumble bee tuna. It really is the best, then add some mayo, a tiny bit of deli mustard, celery, onion, salt and peper to taste. Then as a finishing touch I add just a little bit of Italian Dressing. This ads a wonderful flavor!! You have got to try it!! Everyone in my family raves about it!

I love chicken and they do well on salads. I love this recipe of Chunky Chicken Salad -- it is light but at the same time can be considered as a complete meal with meat, vegetables and fruits in it already.

1/2 kilo chicken breast cooked and cubed, 1 pc red apple cubed, 1 pc green apple cubed, 1 stalk celery diced, 1/4 cup toasted walnut, 1/4 kilo whole seedless grapes, 1 cup mayo, 1/2 cup all purpose cream, 1 tsp all-in-one seasoning granules, salt, sugar, pepper, grated cheddar cheese

Combine chicken, apples, celery, walnuts and grapes. Prepare the dressing: combine mayo, all purpose cream, all-in-one seasoning granules, salt, sugar and pepper. Toss salad ingredients together. Garnish with the cheese and put on salad greens if desired.
