Carob-Cashew-Coconut-Catastrophe! Help! Hello food forum folks, this may be an unusual post & a long shot but perhaps someone knows the answer to my questions. Here goes ...
A little while back I created some tasty raw tasty treats consisting of cashew butter, banana, agave, carob powder, & coconut butter (not coconut oil but a raw/living butter made from whole coconut flesh). I stirred these all together & then shaped them into balls which I rolled in shredded coconut. I then refrigerated them for a little while to let them firm up. They were delicous! A little later I made a much bigger batch with the same ingredients except I added a little peanut butter when I ran out of cashew (also I rolled them in sesame seeds rather than shredded coconut). They were a big hit at the potluck & at least one person asked me for the recipe. A month or so down the road I attempted a third batch in hopes of taking them to a local raw foods potluck. I invested the time, energy & money to obtain all the needed ingredients & even sprung for all organic goodies this time. But catastrophe struck this batch! I stirred in ingredients one at a time, tasting & adding a little more of this or that (I never measure, I just wing it). After a little while the batch began to change. It looked like it was swimming in a pool of oil & the texture & taste changed. It was awful & I felt frusterated to say the least! I ended up making a run to the store & picking up some fruit or something for the potluck. Tonight I tried a 4th attempt, this time a small batch substituting peanut butter for cashew. The same thing happened, the oil seperated & the texture became "gummy." The only factors I can think of that might be different between the sucessful batches & failures is proportions. Like I said I never measure out anything so the proportions of certain ingredients may have been different. I'm wondering could this be some sort of chemical reaction taking place with these ingredients? If so why did it occur only 2 out of 2 times? If anyone has any ideas I would greatly appreciate it. I am determined to make this dish again so I can enjoy it & share it with friends. Maybe some of ya'll can give it a try & let me know how it turns out. Any & all feedback, suggestions, comments, questions, etc are appreciated.
