Afritada is usually cooked by first browning the meat, garlic and onion in little oil. But in order to minimize the fats, I prefer to simmer the main ingredients instead of sauteeing them. The result is less greasy and more healthy, yet still full of flavor.
Ingredients:
1 kilo lean pork, cut into 1" cubes
1 cup tomato sauce
1/2 cup potato, cubed
1/2 cup carrots, cubed
3 pieces bay leaves
2 cups water
1 big onion, quartered
1 green bell pepper, sliced
1 red bell pepper, sliced
3 cloves garlic, crushed
2-4 tablespoons brown sugar
2 tablespoons vinegar
salt and pepper to taste
Procedure:
- Combine pork, water, onion, garlic and tomato sauce in a casserole. Cover and simmer until pork is tender.
- Add carrots, potatoes, bay leaves, brown sugar, salt and pepper.
- When carrots and potatoes are tender, add vinegar. Correct seasoning.
- Lastly add bell peppers. Serve hot with rice.
