Afritada is usually cooked by first browning the meat, garlic and onion in little oil. But in order to minimize the fats, I prefer to simmer the main ingredients instead of sauteeing them. The result is less greasy and more healthy, yet still full of flavor.
Ingredients:
1 kilo lean pork, cut into 1" cubes
1 cup tomato sauce
1/2 cup potato, cubed
1/2 cup carrots, cubed
3 pieces bay leaves
2 cups water
1 big onion, quartered
1 green bell pepper, sliced
1 red bell pepper, sliced
3 cloves garlic, crushed
2-4 tablespoons brown sugar
2 tablespoons vinegar
salt and pepper to taste
Procedure:
  1. Combine pork, water, onion, garlic and tomato sauce in a casserole. Cover and simmer until pork is tender.
  2. Add carrots, potatoes, bay leaves, brown sugar, salt and pepper.
  3. When carrots and potatoes are tender, add vinegar. Correct seasoning.
  4. Lastly add bell peppers. Serve hot with rice.
