Default Lemon Potatoes


Lemon Potatoes

Ingredients:


3-4 yellow or red potatoes - cut into wedges
1 tsp rosemary
1 tsp thyme
1 tsp oregano
1 bay leaf
2 lemons - juiced
1 tsp garlic powder
1/4 medium onion - sliced thinly
1/4 cup olive oil
2-4 tsp crushed peppers (optional-adjust according to taste)
salt/pepper

Directions:
  1. Mix all ingredients in baking pan.
  2. Let marinade for 1-2 hours, stirring every 30 minutes to make sure potatoes marinade evenly.
  3. Bake covered at top rack of oven for 30 minutes at 400F.
  4. Then remove cover for another 30 minutes at 400F.

1/4 cup olive oil, 1/3 cup freshly squeezed lemon juice,1 tablespoon chopped fresh oregano (or 1 teaspoon dried), 2 tablespoons chopped fresh italian parsley, 2 cloves of garlic, minced salt and pepper, 3 russet potatoes, 1 cup vegetable stock.

Preheat the oven to 400 degrees.
Whisk together the olive oil, lemon juice, oregano, parsley, and garlic. Season with salt and pepper to taste. Peel the potatoes and cut each into 6 or 8 wedges. Spread the potatoes out evenly on a heavy, rimmed baking sheet and then pour about 3/4 of the vinaigrette over them. Toss to coat the potatoes well. Pour 1/2 cup of the vegetable stock around the potatoes. Roast the potatoes in the oven, turning every 10 minutes to prevent them from sticking and adding more stock as needed, until tender and lightly browned (about 45 minutes to 1 hour). Remove from the oven, drizzle with the remaining vinaigrette, and serve.

Great Recipe!

I LOVE Lime Potatoes...
Here's my recipe.

Grab 2-3 potatoes about the size of tennis balls.
Pierce with fork so they will vent - you are about to put them in the microwave.
Put them in microwave for up to 10 minutes. You want them to be soft - not mushy - but soft enough to squish with pressure.

Once they are done, let them cool enough to handle.

Place on a baking tray.
Cut deep crosses in them and then work out how to squeeze them in and up so they form "crowns"

Here's the Lime (or citrus) effect.

Grate lime/lemon on fine grater to obtain lots of rind.
Cut the fruit and squeeze the juice.
Pour the juice across and into the potatoes.

I like to chop garlic and top the potatoes with garlic and then the rind.

Place thick slices of hard cheese into the potato crowns.

You can even sprinkle with chopped parsley.

Bake in hot oven for 10-15 mins.

It is even nicer if you pour more juice into the potato each five minutes while it cooks...
this really intensifies the flavour.
