Smile Korean Fusion Food, "Budaejjiage"


I will introduce a Korean special food, Budaejjigae.
There are many kinds of stews made from chilli pepper paste in Korea. When you hear the word 'jjigae' such as Kimchi jjigae, Daenjang jjigae, Soondubu jjigae, etc in Korea, it means stew. It's mushy and spicy. Budaejjigae is a famous and loved dish in Korea. But the history of this food is not so old compared with other dishes because it was born during the Korean war. 'Budae' means military unit, in Korean, actually it refers to the American military unit and Budaejjigae was a product of the Korean war. That may be a possible answer to why Uijeongbu, Gyeonggido where the US Army bases were stationed came to fame ' Uijeongbu
Budaejjigae' was a noted dish.

The origin of this food has a sad story for Korean people who suffered from starvation during the war. Soon after the Korean war, food was scarce in urban areas. Some people made use of surplus foods like sausage, canned ham and baked beans from US Army bases. Hence, Budaejjigae was also known as 'army camp stew'. To suit the Korean's palate, the ingredients were cooked in chilli pepper paste and Kimchi. I think this food was the first fusion food in Korea.


Nowadays this Budaejjigae is still popular with young generations, who are accustomed to western food. The dish incorporates more modern ingredients such as instant ramyeon noodles and rice cakes.

The recipe for Budaejjigae is as follows:
ingredients: Kimchi, a little salt, some chopped pork, minced onion, chopped chile
peppers, water, Korean red pepper paste(Gochujang), sliced spinach, sliced sausage,
ham, can baked beans, sliced tofu, some ramyeon noodles.
directions
Put some anchovies in boiling water for 15 minutes to make a deep anchovy
sauce. ( There are other ways to make sauce. You can choose a loaf of beef or
dried driftweed instead of anchovy.)
Add Korean red pepper paste and bring to the boil.
Arrange the prepared ingredients such as pork, Kimchi, sausage, ham, can baked
beans in the cooker with the sauce and bring to the boil.
Add a little salt, minced onion, sliced spinach, sliced Tofu. Boil for a couple of
minutes.
Add the ramyeon noodles. ( ramyeon noodles are optional) and immediately turn off the light.


As you see, the recipe of Budaejjigae is very simple. Try to make this food by
yourself and for your family. It will certainly taste yummy.
