Post Grilled aubergines(filled with shrimps) with rattattouille and couscous


Wat is it
It is a dish made in Tunesia, with verry much vegetables.
It is a verry light dish so perfect for people who want to eat nice and not ruining their diet! :-)

Needed
4 persons
- 1 aubergine
- 16 shrimps
- 1 small red paprika
- 1 smal yellow paprika
- 1 small red onion
- 1 smal courgette
- 1 small piece of garlic
- 4 tomatoes without the skin and without the seeds
- ( Olive oil / Water)
- Thyme

Getting started
- Cut the aubergine in slices of approximately 4 mm (as much slices as there are shrimps), cover the slices with a little olive oil

- Slice the paprikas in small slices (ofcourse remove the seeds)
- Cut the onion (ofcourse remove the skin)
- Cut the courgette in small pieces
- Peel the skin of the shrimps and remove the insides
- Bake the shrimps verry shortly in a little olive oil and spice it up with salt and peper

- Wrap the slices aubergine around the shrimps, cover with a little olive oil and put them in a preheated oven( 180 ° ) for 5 minutes

- Add the onion and the paprika en cook them for 2 minutes
- Add the tomatoes, the thyme, and the garlic.
- Cook all the vegetables for a little while longer and bring it to taste with salt,peper,... Be creative with the herbs!! :-)

- The instructions for the couscous are always different so look what the package says :-)



How to serve
- Put the couscous in a deep plate
- Place the filled aubergines at the side of the couscous
- Put the vegetables on the couscous
- And decorate with thyme!!
