Default Cheap and Healthy Recipes


In this tread we shall post cheap and healthy recipes. Let me start with potatoes and eggs:

Potatoes and eggs: (1 portion)

2 potatoes
2 eggs
Salt
Black pepper

Boil the potatoes. Fry the eggs. Season and taste with salt and black pepper. Serve with bread.

As far as cheap meals go, soup is by far the most cost effective! most recipes Ive tried have cost about $2 to make... and that serves 4 so its pretty cool.

i get most my recipes from www.healthysoup.net but there are plenty others out there!

I posted this on another thread too FYI.

Here is a simple broccoli soup recipe (that's cheap and healthy!):

- head of broccoli
- boiled water
- salt (mostly to taste)
- blender
- goat cheese
- walnut/s
-----------------------------------
- Simply add broccoli to boiled water until soft and dark green with some salt
- Add broccoli to blend WITH its own water - important (fill blender ~ 3/4 high with the water)
- Blend until smooth and season a bit with salt
- Serve over a few slices of goat cheese and two walnut for looks

Here's my favourite healthy soup

Serves 4

Prep time 10 min
Cooking time 45 min
Ingredients
  • 2 Potatoes
  • 1 Onion
  • 5 Bunches of Watercress
  • 1 1/2 Pints of Chicken stock
  • 2 oz Butter
  • 2 oz Stilton or any good Blue cheese
Method
  • Peel potatoes and chop into small cubes
  • Chop onion
  • Melt the butter in a large saucepan, add the onion and potatoes, sweat for 5-10 minutes
  • Stirring frequently to avoid burning, add a little olive oil if necessary
  • Add Watercress and stock
  • Simmer for about 30 minutes
  • Leave to cool down a little
  • Liquidise
  • Pour back into the saucepan to reheat
  • Season and crumble cheese in just before serving
Cooks Tip
  • I use unsalted butter as it prevents burning
  • This soup looks great served in white soup bowls with fresh crusty bread

I'm making this as we speak Just finished making the stock from yesterdays chicken.

3 Egg Yokes.
3 tbsp Lemon Juice.
2 tbsp Choped Parsley.
1 ltr Chicken Stock.
60g Rice.
Salt and Pepper to taste.
Slice of Lemon to garnish (optional)
  1. Bring stock to simmer and add the rinsed rice.
  2. Cook rice until tender
  3. Whisk yokes in a bowl, add half the lemon juice and whisk until smooth and bubbly
  4. Add a laddle of soup to the egg mixture and whisk in.
  5. Remove the rice from the heat and add the egg yokes, whisking all the time to prevent the eggs from curdling
  6. Add the remainer of the lemon juice and mix in the parsley.
  7. Serve at once garnish with the slices of lemon.
You should get about 4 portions of this and it's very tasty.

Powerful Milk Shake

Ingredients:

Maca powder (from hidalgo foods) 1 tablespoon
1/2 glass of milk
1 medium banana
sesame paste
honey
Almonds or peanut butter.

Put one tablespoon of maca powder and 1/2 glass of milk in the blender. Mix it with one medium banana finely chopped, one teaspoonful sesame paste and honey. Then add some almond or peanut butter.
